If you prefer eating vegetable meals than rice meals, this quick recipe is a breeze. Try this one out for a delicious and satisfying salad. What you will need:
• 1 large cucumbers, sliced thin
• 1 small red onion, sliced thin
• red wine vinegar
• ground black pepper
• pepperoncini, diced
Directions:
Soak the cucumber and onion in the vinegar. Add pepper and pepperoncini to taste. Refrigerate before serving.

This easy recipe makes a delicious meal with the least effort. If you are a mom on the go, this one is for you. What you will need:
• 1 kilo boneless, skinless chicken breasts
• 1 bottle Good Seasons Italian Salad Dressing
Directions:
Preheat the oven to 350 degrees. Prepare the salad dressing as instructed on a bowl. On a 9×13 inch baking dish, place the chicken and pour over it the dressing. Bake for 45 minutes, turn it over and bake for another 15 minutes. It is recommended to serve with rice while hot.

I suggest this for a children’s party. The kids would enjoy helping make these. Savory bacon, Cheddar, mayo and mustard dress up plain-old pumpernickel for impressive party bread. So quick and simple. It would even be perfect for holiday open houses, cocktail parties or even movie-night snacks. This is one Italian recipe that has ingredients that you can find in any grocery.
Ingredients
1 pound sliced bacon
2-1/2 cups shredded Cheddar cheese
2 tablespoons prepared mustard
1 cup mayonnaise
1 pound sliced pumpernickel party bread
Cooking Instructions
Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to broil.
In a medium bowl combine the bacon, cheese, mustard and mayonnaise. Stir well. Arrange party bread on a cookie sheet. Spoon mixture onto each slice of bread.
Broil for 5 minutes, or until bubbly.

Ingredients
1 long French or Italian bread
1/4 cup (50 mL) olive oil
1 clove garlic
1/2 tsp. (2 mL) salt
1/4 tsp. (1 mL) pepper
2 cups (500 mL) chopped ripe tomatoes
1/2 cup (125 mL) chopped green onions (about 4)
1-1/2 cups (375 mL) shredded mozzarella cheese
Cooking Instructions
Preheat the broiler element of the oven.
Cut the bread in half crosswise, then slice in half lengthwise — making sure the two halves are as evenly sliced as possible. Arrange the four pieces of bread — cut side up — on a baking sheet.
In a small bowl, stir together the olive oil and garlic. With a small brush, brush this oil over the cut sides of the bread. Sprinkle lightly with salt and pepper. Place under the broiler for 3 to 5 minutes — until just lightly toasted. Remove from oven.
Stir together the tomatoes and green onions. Spoon over the toasted side of the bread. Sprinkle with shredded cheese. Return pan to the oven and broil just until the cheese melts and begins to bubble — 2 to 4 minutes. Cut bruschetta into sections and serve while still hot.

Personal touches during special occasions are widely appreciated. This gift able idea is good for this purpose because it is very simple and quick. You just need:
• 1 Duncan Hines yellow cake mix
• 3 Large eggs
• 1 1/3 cups water
• 1/3 cup oil
• flour
• cheese mix
• powdered sugar
• fresh strawberries or blueberries

Directions:
Prepare the oven by heating it to 350 degrees. After mixing the Duncan Hines as instructed, pour on a large glass pan that was previously grease and floured. On a separate bowl, mix the eggs, water, oil and cheese mix and place on top of the pan. Bake for an hour. It is better chilled with sugar of fruits on top before serving.

For a handsome delicious meal, prepare this recipe in few minutes. You will only need the following ingredients:
• 8 oz. medium noodles
• 1 lb mild Italian sausage, minced
• 1/4 cup onion, minced
• 4 oz. button mushrooms, sliced
• 2 tbsp. pimento stuffed olives, minced
• 8 oz cheddar cheese, shredded
• 8 oz pizza sauce
• Parmesan cheese, grated
• oil

Directions:
With the hot cooking oil on a frying pan, cook the onions and sausage over low heat until medium brown. Drain the excess oil. On a separate pan, cook the noodles and drain water.
Except the parmesan and half cup of cheddar cheese, mix the remaining ingredients together with the cooked ones in a bowl and pour into casserole. Allow the cheese to melt by baking for about 20 minutes and add the cheese left 10 minutes before it is done. It is better served hot with your favorite drinks.

Italian in the middle of the week? Oh sure. This, you can cook any day of the week. Easy, easy, easy. Why not make a Wednesday a special day for a change? Surprise your special someone with this really tasty Almond Chicken with Rice!
Ingredients:
4 small boneless skinless chicken breasts (1 lb./450 g)
1/4 cup KRAFT Extra Virgin Olive Oil Tuscan Italian Dressing, divided
1 can (10 fl oz/284 mL) 25%-less-sodium chicken broth
1/2 tsp. garlic powder
2 cups broccoli florets
1 cup instant white rice, uncooked
1/4 cup sliced almonds, toasted, divided
Directions:
COOK chicken in 2 Tbsp. dressing in large non-stick skillet on medium heat 4 min. on each side or until evenly browned.
STIR in broth, garlic powder and remaining dressing; bring to boil. Cover; simmer 5 min or until chicken is done (170ºF). Remove chicken; cover to keep warm.
ADD broccoli to skillet; cook, uncovered, 3 min. Stir in rice and 3 Tbsp. nuts. Remove from heat; cover. Let stand 7 min. Serve chicken over rice; top with remaining nuts.

What you will need:
• 1 lb Mostaccioli shells or broken lasagna noodles
• 1 lb ground beef or pork
• 1 lg. jar Prego extra chunky spaghetti sauce
• 6 oz. cottage cheese
• 16 oz. Mozzarella cheese, shredded
• 1/4 cup Parmesan cheese, grated

Directions
Boil meat in water until tender then drain it off. On a pot, cook the noodles. In a separate pan, mix all the ingredients and cook on low heat for 5 hours while stirring occasionally. Serve with cheese on top.

If you are more inclined to use the oven than the stove or just beginning to learn how to use one, this recipe is just for you.

What you will need:
• 1 large egg
• 1/4 cup fresh parsley, minced
• 1/2 tsp. dry oregano
• salt
• black pepper
• 1/2 cup spaghetti sauce
• 1/2 cup dry bread crumbs
• 1 1/2 lb ground beef or meatloaf mix

Directions:
Prepare the oven by heating it up to 350 degrees. On a bowl, beat the egg and mix thoroughly with the other ingredients except ¼ cup spaghetti sauce. In a 9×5″ loaf pan, place the mix and place the spaghetti sauce on top. Bake for about an hour or until browned. Let it stand for about 10 minutes before serving the slices.

Got time to cook something special for a Sunday Italian dinner? Impress everyone with this Parmesan Chicken. The crispy crust and the thought of smelling that cheese all around the kitchen, mere imagining this makes me hungry! Let’s get over that kitchen and cook away!
Oven Fried Parmesan Chicken
Ingredients:
1 Egg white
3 Tb Parmesan Cheese
1 1/2 c Cornflakes, crushed
1/4 tsp ea Salt & Black Pepper
1 tsp dried Thyme
4 boneless and skinless Chicken Breasts
Directions:
Preheat oven to 400 degrees F.
Beat egg white until frothy.
In another bowl mix Parmesan cheese, cornflakes, salt, pepper, and Thyme.
Dip each chicken piece in the egg white and then dip into the cornflakes mixture, patting well to ensure the mixture adheres to the chicken.
Place the chicken on a lightly oil sprayed pan.
Bake about 25 mins or until internal temperature reaches 165 degrees F.
