Ingredients:
- Grated parmesan cheese
- 1 pack of tortellini, refrigerated
- Salt and pepper
- ½ cup fresh basil leaves
- 2 cups, baby spinach leaves, pre-washed
- 1 can of Italian style tomatoes, stewed
- ½ cup of red wine, dry
- 4 cups of chicken broth
Directions:
Mix the broth, wine and some stewed tomatoes in a huge pot and make it boil. Add up the tortellini and cook for around 5 to 7 minutes or just follow the cooking time said on the package. Add the basil and spinach leaves and cover the pot. Remove the pot and let it stand on room temperature for 2 more minutes until all the leaves have wilted.
You can now pour the soup in the bowl and top with some parmesan cheese.

- ¼ cup of parmesan cheese, grated
- 2 tbsp butter
- 1 tsp salt
- 3 ¼ cups of lukewarm water
- 1 cup of polenta
Directions:
Set the oven in 350 degrees F. Mix all the ingredients in a huge bowl and combine it well. Place all the ingredients in a greased baking pan. Bake without cover for 50 minutes. With the use of a fork, stir it well and bake for another 10 minutes. Remove it out of the oven and sprinkle on top with cheese.

Ingredients
- 1-8 oz of Mascarpone cheese
- 2 tbsp light brown sugar
- 1/3 cup of sweet Marsala wine
- 2 pints sliced fresh strawberries
- 4 whole strawberries for garnish
Directions:
Combine the sugar and Marsala in a bowl until all the sugar has melted. Slice up the strawberries and mix in the wine and sugar mix. Cover the entire bowl and make it chill inside the refrigerator for a number of hours. Stir it occasionally so that all the strawberries are fully covered.
When the strawberries have all been chilled, then fill up some wine glasses with the mascarpone cheese. Top it with the whole strawberries together with wine sauce and is good to serve 4.

Ingredients:
- 1 tsp dried Thyme
- 1 tsp dried Oregano
- ½ cup grated Parmesan cheese
- 1 cup of mozzarella cheese that is shredded
- ¼ cup milk
- 10 eggs
- Salt and pepper
- 2 minced garlic cloves
- 2 tbsp olive oil
- 2 onions
- 2 potatoes
Directions:
Peel and slice the potatoes and peel and mince the onions along with the garlic cloves. Heat up a large skillet with some olive oil under medium heat. Add up some spices to the heated oil for richer flavor. Add up the potatoes, salt and pepper and cover to let cook for 3 minutes. After which, turn up the potatoes and add up the onions and sauté together until everything looks golden brown.
In the meantime, beat the eggs in a huge bowl until they are well mixed before you combine the cheese and milk. Season it up with some pepper and salt as well before stirring in some spices and garlic.
Pour this mix to the potatoes and use a spoon to mix. Turn the heat to low and cook for 10 to 15 minutes more. Place your pan inside the oven and broil it for 3 minutes until you get to see it in golden brown color. Just remember not to overcook it and serve warm.

Here are the Ingredients:
1 Large pizza crust
1/2 Cup pizza sauce of your choice
1 Cup Feta cheese
1 Cup Mozzarella cheese
1 Cup sliced ham (you can also use leftover ham)
½ Cup mushroom (sliced)
½ Tsp each of crushed oregano, red pepper and basil
Salt to taste
Preparation
Preheat the oven to 400 degrees F. On a greased pan, place the pizza crust. Smear the pizza sauce over the crust. Sprinkle mozzarella cheese evenly over the pizza and arrange the sliced ham over the cheese. Sprinkle the mushroom slices. Over the mushroom, sprinkle the feta cheese evenly. Sprinkle salt, oregano, basil and pepper over the cheese and bake for 10 to 15 minutes, until the cheese turns brown and the crust is crisp.
You can always shift to vegetable toppings instead of meat.

Thank you to those who invented frozen ravioli’s! How much did this make Italian easier! And who hates Ravioli? I love Ravioli specially that this has cheese in it. My son eats anything that has cheese so this is a really nice way to make him eat veggies!
Ingredients

1 package(s) (20-ounce) frozen cheese ravioli or tortellini
6 teaspoon(s) extra-virgin olive oil, divided
4 clove(s) garlic, minced
1/4 teaspoon(s) salt
1/8 teaspoon(s) crushed red pepper
1 bag(s) (16-ounce) frozen chopped or whole-leaf spinach
1/2 cup(s) water
1/4 cup(s) freshly grated Parmesan cheese
Directions
1.Bring a large pot of water to a boil; cook ravioli (or tortellini) according to package directions.
2.Meanwhile, heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add salt, crushed red pepper to taste, spinach and water. Cook, stirring frequently, until the spinach has thawed, wilted and heated through, 5 to 7 minutes. Divide among 4 bowls, top with the pasta and drizzle 1 teaspoon of the remaining oil over each portion. Serve immediately with a sprinkle of Parmesan.

Throwing an Italian dinner but not much time to prepare? Or maybe, you have time but you want another simple dish to the menu? I know I am. It’s my husband’s birthday next week and we’re having an Italian dinner for the family. I love to personally cook when dinners are done at our home. When I saw this recipe, I thought, it wouldn’t be tough another dish to our menu. My husband likes having egg in all 3 meals in a day and my son would eat anything that has cheese in it. This is just perfect and it just couldn’t get any simpler and easier than this!
Smoked Pork Sausage Frittata
Ingredients
1 Smoked Pork Sausage – sliced
500g potatoes – peeled and sliced
120g cheddar cheese – grated
5 medium eggs
Instructions
1.Boil the potatoes for 10 – 12 minutes. Meanwhile, heat a splash of oil in a frying pan and add the Smoked Pork Sausage; cook for 5 minutes.
2.Drain the boiled potatoes, add to the frying pan and fry for a further 3 minutes. Meanwhile beat the eggs in a mixing bowl, season with the salt and pepper before adding the grated cheese.
3.Pour the eggs over the potatoes in the frying pan and cook for 5 minutes without stirring. Turn the heat to low, cover the frying pan with a lid and cook gently for a further 8 – 10 minutes until the egg has fully set.
4.Slide the frittata out onto a plate and leave to cool for 10 minutes.

I suggest this for a children’s party. The kids would enjoy helping make these. Savory bacon, Cheddar, mayo and mustard dress up plain-old pumpernickel for impressive party bread. So quick and simple. It would even be perfect for holiday open houses, cocktail parties or even movie-night snacks. This is one Italian recipe that has ingredients that you can find in any grocery.
Ingredients
1 pound sliced bacon
2-1/2 cups shredded Cheddar cheese
2 tablespoons prepared mustard
1 cup mayonnaise
1 pound sliced pumpernickel party bread
Cooking Instructions
Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to broil.
In a medium bowl combine the bacon, cheese, mustard and mayonnaise. Stir well. Arrange party bread on a cookie sheet. Spoon mixture onto each slice of bread.
Broil for 5 minutes, or until bubbly.
