Quick Recipe: Italian Meatloaf

If you are more inclined to use the oven than the stove or just beginning to learn how to use one, this recipe is just for you.

What you will need:
• 1 large egg
• 1/4 cup fresh parsley, minced
• 1/2 tsp. dry oregano
• salt
• black pepper
• 1/2 cup spaghetti sauce
• 1/2 cup dry bread crumbs
• 1 1/2 lb ground beef or meatloaf mix

Directions:
Prepare the oven by heating it up to 350 degrees. On a bowl, beat the egg and mix thoroughly with the other ingredients except ¼ cup spaghetti sauce. In a 9×5″ loaf pan, place the mix and place the spaghetti sauce on top. Bake for about an hour or until browned. Let it stand for about 10 minutes before serving the slices.

Are you tired of the usual meal in the morning? Are you always in a hurry for the school or office? Just apply this quick recipe and add some twist on your pale Italian loaf bread for a pleasurable snack or breakfast. You will surely crave for more after trying it out.

You will just need few ingredients to make it done. Prepare a pound or 500 grams of soft butter which is maintained at room temperature, a pack of dry Italian dressing mix bought from the supermarket and one loaf of Italian bread carefully and evenly sliced.

For this recipe, just mix the dry Italian dressing and butter on a bowl. Using a spreader knife, apply generously on both sides of the sliced bread. With an aluminum foil, wrap it securely and bake for 20-25 minutes at 350 degrees oven heat. Serve while hot with your preferred Italian food or even a cup of coffee. Refrigerate the remaining butter.

Kids always love pasta dishes and cheese. It seems that anything that has pasta, macaroni or cheese is simply divine for them. Thus, it has become a delight and an interest to look for recipes to serve my little angels. Today, I found a baked macaroni and cheese recipe that my kids enjoyed. I am sharing this with you.

BAKED MACARONI WITH CHEESE by Alton Brown
Ingredients
• 1/2 pound elbow macaroni
• 3 tablespoons butter
• 3 tablespoons flour
• 1 tablespoon powdered mustard
• 3 cups milk
• 1/2 cup yellow onion, finely diced
• 1 bay leaf
• 1/2 teaspoon paprika
• 1 large egg
• 12 ounces sharp cheddar, shredded
• 1 teaspoon kosher salt
• Fresh black pepper
Topping:
• 3 tablespoons butter
• 1 cup panko bread crumbs

Directions
Preheat oven to 350 degrees F. Cook the pasta to al dente in a pot of salted boiling water. Melt the butter in a separate pot. Whisk in the flour and mustard and keep it moving for about five minutes until it is free of lumps. Add the milk, onion, bay leaf, and paprika and simmer for ten minutes. Remove the bay leaf. Add the tempered egg and ¾ of the cheese while stirring. Put salt and pepper then fold macaroni into the mix before pouring into a 2-quart casserole dish. Top with remaining cheese.

Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

Apricot Skewers wrapped in Prosciutto | Spiedini di Albicocca al Prosciutto Crudo

Any Itialian meal would not be complete without starting off with appetizers or Antipasti as Italians call it. That being said, let us start this blog, Italian Recipes with this simple antipasti recipe.

This simple recipe we have for you is an amazing way to wet the palate for a great Italian meal. The good thing about this recipe is the ability of dried apcricot’s sweetness to balance out the salty flavor of the prosciutto. This is perfect both as an antipastoor just as a party food. If you choose to serve this as an antipasto, you will need to increase the recipe substantially.

Preparation Time: 15 mins
Cooking Time: 10 mins

Ingredients:

* 8 dried apricots
* Brandy
* 1/4 lb (100 g) fresh mild cheese, cut into 8 pieces
* 4 slices prosciutto, cut in half lengthwise
* 4 wooden skewers

Preparation:
Start by soaking the apricots in brandy for 10 mins. After that is done, open the apricots up as you would a book using a knife. Put a piece of the cheese you cut previously at the center of each apricot then roll the apricot around it. After that, get a piece of prosciutto and wrap it around the apricots then put two of those into a skewer to keep them together.

Broil the skewers for a couple of minutes. You may choose to bake them for 2 minutes in a 500 F (250 C) preheated oven.

-Use smoke ham or speck instead of prosciutto
-add half an almond or walnut to the the cheese
